Quesadillas – Calgary Quesadillas
Tortilla folded and stuffed mainly with cheese and avocado. Fry again after the filling and almost always accompanied by a sauce. The quesadilla is a Mexican dish consisting of a corn tortilla, or wheat, folded in half, depending on the region, 1 may be filled with cheese or other ingredients and eaten hot, 2 already be fried or cooked in the comal.3 Although cheese is considered as the main ingredient, in the metropolitan area of Mexico City the quesadillas can contain many other stews besides cheese or, even, do without it. So, in the capital, there are, for example, quesadillas of cheese (without this being a pleonasm), 4 of picadillo, of huitlacoche, of brains, of pumpkin flower, etc., 3 while in the rest of the country normally quesadillas are prepared only with cheese.
