Molletes con Frijoles y Queso – Mexican Food

Homemade Molletes! It is an open faced Mexican sandwich on a Bolillo: a Mexican type of French bread. To make them you will need:

4 bolillo rolls, sliced in half lengthwise
3 tablespoons butter at room temperature
1 (16 ounce) can refried beans, heated
Around 7 ounces of Shredded Cheese Manchego

Spread some butter on each bolillo half, then spread the beans, sprinkle the cheese and place on a baking dish in the oven at 350 degrees or in a toaster oven until the cheese has melted (about 5 minutes). Amounts of each ingredient may vary depending on the size of your bolillos or how much you want on each one.
